The Fully Raw Diet offers a 21-day plan to help people enjoy a clean, plant-based, healthful approach to eating. The founder of FullyRaw, a raw vegan lifestyle brand, initiates readers into a raw diet with this comprehensive guide. Diagnosed with hyperglycemia (the precursor to type 2 diabetes) at age 18, Carrillo-Bucaram suffered under the treatments prescribed by her doctors until a chance encounter with an enthusiastic raw foodie at Whole Foods changed her life. She switched her diet of Latin American and Middle Eastern foods to one of raw, organic whole fruits and vegetables, cutting out animal products in the process, and found her symptoms waning. Carrillo-Bucaram then used a diet created by raw food advocate Douglas Graham to outline the core of FullyRaw, which follows an 80/10/10 caloric ratio, or 80% minimum of calories from carbohydrates, 10% maximum from protein, and 10% maximum from fat. The first part of the guide explains the 21-day diet and includes moving, personal stories about the authors skeptical family and journey to becoming fully raw. This is followed by recipes and accompanying exercises. Included throughout are gorgeous color photographs of Carrillo-Bucaram with fresh produce on farms, as well as photos of her dishes, which look delicious.
