Osborne (Glutenology), a chiropractor and clinical nutritionist, argues that eating gluten can produce pain stemming from autoimmune conditions. As a response, he proposes a strict elimination diet eschewing grains, pseudo-grains, and many vegetable oils; grain-fed meat; farm-raised fish and shellfish; dairy products; processed and GMO foods; and sugars and artificial sweeteners. Osborne contends that gluten is a known neurotoxin and that 140 different autoimmune conditions can be triggered by eating any kind of grain, not just wheat.
